The first thing I go for in the kitchen is my knife. I have about 13 of them and am looking to buy a few more in the future. Why? Because the knife is more than a tool — it’s an extension of your hand. A sharp, well-balanced knife transforms cooking from a chore into an art, allowing you to slice, dice, and chop with precision and ease.
Contrary to what some think, a sharp knife is actually safer than a dull one (despite my late mother always arguing with me that a sharp knife is dangerous)! Dull blades require more force, making slips more likely — and that’s when accidents happen. Sharp knives glide cleanly through ingredients, preserving their texture and flavor while protecting your fingers.
Just as important is the type of knife. A chef’s knife, paring knife, and serrated bread knife are the holy trinity of kitchen workhorses. Investing in quality — and maintaining them with regular honing and occasional sharpening — will save time and frustration.
For all the work I do in the kitchen, I sharpen my knives every 4 - 6 months and hone them daily.
